As well as the bread I made Hatch Chile Gazpacho, as the Hatch chilies are coming to the end of their season. Recipe below;
- 2 mild Hatch chiles
- 1 large tomato (skinned)
- 1 small seedless cucumber (skinned)
- 1 spring onion (scallion)
- 1 clove of garlic
- 1 tablespoon of lime juice
- 1 tablespoon of extra virgin olive oil
- 1 tablespoon of tomato paste
- 8oz of chicken stock
- 1 teaspoon of smoked paprika
- salt & pepper to taste
Add everything to a blender and then chill for at least 2 hours
